Easy Radio : My favourite software on the Windows platform for recording through the sound card. It supports plenty of audio formats including mp3, ogg (Ogg Vorbis), wma, vox, au, aiff, mp4, and flac. The audio can be recorded in any quality upto 320 kBps stereo. You can also listen to numerous radio stations categorised by country they are run from.

Audacity for Windows, Linux and Mac OS X : Another freeware, but which can also run on the Linux and Macintosh is Audacity. Available at http://audacity.sourceforge.net. Audacity is free, open source software for recording and editing sounds.
